Pat the pork loin dry and season all sides with salt and black pepper.

Heat vegetable oil in a large skillet over medium-high heat. Sear the pork loin on all sides until golden brown, about 2–4 minutes per side.

Transfer the seared pork loin to the slow cooker. Distribute minced garlic evenly over the pork.

Pour soy sauce around the pork, add pineapple chunks with juice, and sprinkle brown sugar over the top.

Cook on low for 4–6 hours for sliceable pork, or 8–10 hours for a more tender, shreddable consistency. Occasionally baste with the cooking juices.

For shredded pork, remove the meat after the longer cooking time, shred with forks, return to the slow cooker, and cook on low for an additional hour.
