Slow Cooker Garlic Parmesan (Print Version)

# Ingredients:

01 - 2 pounds potatoes, cut into 1 ½- to 2-inch chunks
02 - 2 tablespoons olive oil
03 - 1 teaspoon kosher salt
04 - 3/4 teaspoon ground black pepper
05 - 1/2 teaspoon paprika
06 - 2 pounds skinless, boneless chicken breasts, diced into 1 ½-inch pieces
07 - 1 cup creamy Parmesan garlic sauce, such as Buffalo Wild Wings Parmesan Garlic Sauce
08 - 1/2 cup water or chicken stock
09 - 2 cups shredded mozzarella cheese

10 - 1/4 cup grated Parmesan cheese
11 - 1 tablespoon chopped fresh parsley, or to taste

# Instructions:

01 - Combine potatoes, olive oil, 3/4 teaspoon salt, 1/2 teaspoon black pepper, and paprika in the bottom of a slow cooker. Stir until well coated.
02 - Add diced chicken pieces on top of the potato mixture. Sprinkle with the remaining salt and black pepper.
03 - Whisk the Parmesan garlic sauce and water together in a bowl until well blended. Pour the mixture evenly over the chicken and potatoes.
04 - Set the slow cooker to High and cook for 4 hours (or Low for 6 hours) until the chicken is cooked through and the potatoes are tender.
05 - During the last 20 minutes of cooking, add mozzarella cheese and optional Parmesan cheese. Continue to cook, covered, until the cheese has melted.
06 - Sprinkle with fresh parsley before serving, to taste.

01 - Using a pre-made Parmesan garlic sauce saves time and adds consistent flavor.
02 - For a richer flavor, replace water with chicken stock.
