# Ingredients:

01 - 2 pounds beef sirloin, chuck roast, or stew meat, cut into bite-sized chunks
02 - 1 teaspoon salt
03 - 1 teaspoon ground black pepper
04 - 1 to 2 tablespoons olive oil, for browning (optional)
05 - 1 pound baby potatoes, halved (optional)
06 - 1 cup baby carrots (optional)
07 - 1 cup sliced mushrooms (optional)
08 - 1 medium onion, roughly chopped (optional)

→ Sauce and Aromatics

09 - 1 cup beef broth, low-sodium preferred
10 - 1/4 cup soy sauce
11 - 1/4 cup Worcestershire sauce
12 - 3 tablespoons brown sugar
13 - 2 tablespoons tomato paste
14 - 3 cloves garlic, minced
15 - 1 teaspoon smoked paprika
16 - 1/2 teaspoon onion powder
17 - 1/4 teaspoon red pepper flakes (optional)

18 - 1 to 2 tablespoons cornstarch
19 - 2 tablespoons cold water

# Steps:

01 - Pat beef pieces dry with paper towels. Season evenly with salt and black pepper, tossing to ensure coverage.
02 - In a large skillet over medium-high heat, add olive oil. In batches, sear beef on all sides until browned. Transfer browned pieces to slow cooker. This step can be skipped for convenience.
03 - In a medium bowl, whisk together beef broth, soy sauce, Worcestershire sauce, brown sugar, tomato paste, minced garlic, smoked paprika, onion powder, and red pepper flakes until smooth.
04 - Arrange beef in slow cooker insert. Scatter baby potatoes, carrots, mushrooms, and onion over and around the meat as desired. Pour the prepared sauce evenly over all ingredients.
05 - Cover and cook on low setting for 6 to 8 hours or on high for 3 to 4 hours, until beef is fork-tender.
06 - About 20 minutes before serving, whisk together cornstarch and cold water until smooth. Stir this slurry into the slow cooker, cover, and continue cooking on high for 15 to 20 minutes until the sauce has thickened.
07 - Serve beef and vegetables with thickened sauce over mashed potatoes, rice, or egg noodles. Garnish with freshly chopped parsley if desired.
