# Ingredients:

01 - 2 pounds beef sirloin, chuck roast, or stew meat, cut into bite-sized pieces

04 - 1 teaspoon smoked paprika
05 - 1/2 teaspoon onion powder
06 - 1/4 teaspoon red pepper flakes (optional)

→ Sauce Base

08 - 1 cup beef broth, low-sodium preferred
09 - 1/4 cup soy sauce
10 - 1/4 cup Worcestershire sauce
11 - 3 tablespoons brown sugar
12 - 2 tablespoons tomato paste
13 - 3 cloves garlic, minced

→ Vegetables (optional)

14 - 1 pound baby potatoes, halved
15 - 1 cup baby carrots
16 - 1 cup sliced mushrooms
17 - 1 medium onion, roughly chopped

→ Thickening

18 - 1 to 2 tablespoons cornstarch, mixed with 2 tablespoons cold water

# Steps:

01 - Pat beef pieces dry with paper towels. Sprinkle with salt and black pepper, then toss until evenly coated.
02 - Heat olive oil over medium-high in a large skillet. Sear beef in batches, turning until browned on all sides. Skip this step if short on time.
03 - In a mixing bowl, whisk together beef broth, soy sauce, Worcestershire sauce, brown sugar, tomato paste, minced garlic, smoked paprika, onion powder, and red pepper flakes (if using) until fully combined.
04 - Place seared beef into the slow cooker. Arrange potatoes, carrots, mushrooms, and onion around and over the meat if using. Pour the prepared sauce evenly over all ingredients.
05 - Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours, until beef is fork-tender.
06 - Twenty minutes before serving, stir together cornstarch and cold water until smooth, then mix into the slow cooker. Cover and continue cooking on high for 15 to 20 minutes, until the sauce thickens noticeably.
07 - Serve hot over mashed potatoes, steamed rice, or egg noodles. Garnish with freshly chopped parsley if desired.
