Shrimp and Salmon Cheesy Grits (Print Version)

# Ingredients:

→ Shrimp

01 - 1 pound large shrimp, peeled and deveined
02 - 1 tablespoon olive oil
03 - 1 teaspoon smoked paprika
04 - 1 teaspoon garlic powder
05 - 1/2 teaspoon onion powder
06 - 1/2 teaspoon cayenne pepper, optional
07 - Salt, to taste
08 - Black pepper, to taste
09 - Fresh parsley, chopped, for garnish

→ Salmon

10 - 2 salmon fillets
11 - 1 tablespoon olive oil
12 - 1 teaspoon garlic powder
13 - 1 teaspoon smoked paprika
14 - 1/2 teaspoon lemon pepper seasoning
15 - Salt, to taste
16 - Black pepper, to taste

→ Grits

17 - 1 cup stone-ground grits
18 - 4 cups water or chicken broth
19 - 1 tablespoon butter
20 - 1/2 cup heavy cream
21 - 1/2 cup sharp cheddar cheese, shredded
22 - Salt, to taste
23 - Black pepper, to taste

# Steps:

01 - In a medium saucepan, bring the water or chicken broth to a boil. Whisk in the grits and reduce heat to low. Cook uncovered, stirring occasionally, for 20 to 25 minutes until thick and creamy.
02 - Once grits are tender, stir in the butter, heavy cream, and shredded cheddar cheese. Season with salt and black pepper. Keep warm until serving.
03 - In a bowl, combine shrimp with olive oil, smoked paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper. Toss until evenly coated.
04 - Heat a skillet over medium-high heat. Cook the marinated shrimp for 2 to 3 minutes per side until pink and cooked through. Set aside.
05 - Pat the salmon fillets dry. Rub with olive oil, then season both sides with garlic powder, smoked paprika, lemon pepper, salt, and black pepper.
06 - Heat a skillet over medium-high heat. Place the salmon fillets skin side down and cook for 4 to 5 minutes per side until the fish flakes easily with a fork.
07 - Ladle the cheesy grits onto plates. Top each portion with a salmon fillet and arrange the sautéed shrimp around the salmon. Garnish with chopped parsley and an extra pinch of smoked paprika.
