Heat a skillet over medium-high heat. Season shrimp with salt and black pepper. Melt 1 tablespoon of butter in the pan, add minced garlic, and sauté until fragrant, about 30 seconds. Add shrimp and sauté until pink and cooked through, 3 to 4 minutes. Remove shrimp from skillet and set aside.

Combine the remaining melted butter with any residual garlic. Set aside for brushing bread.

Brush one side of each bread slice with garlic butter. On two slices, layer mozzarella cheese and Parmesan evenly. Top with cooked shrimp, then cover with the remaining bread slices, buttered side outward.

Heat the same pan over medium heat. Place sandwiches in the pan and grill, pressing gently, until each side is golden brown and the cheese is melted, approximately 4 to 5 minutes per side. Work in batches as needed.

Remove from pan, slice if desired, and garnish with chopped fresh parsley. Serve immediately with a side salad or chips.
