Easy Shrimp Avocado Salad (Print Version)

# Ingredients:

→ Main Ingredients

01 - 1 pound large shrimp, thawed
02 - 2 cups shredded lettuce
03 - 1/4 red onion, diced
04 - 2 avocados, sliced
05 - 1 tablespoon chopped cilantro

→ Zesty Lime Dressing

06 - 3 tablespoons extra-virgin olive oil
07 - 3 tablespoons lime juice
08 - 1 teaspoon cumin
09 - 1/2 teaspoon salt
10 - 1/2 teaspoon fresh cracked pepper

# Instructions:

01 - Bring a large pot of water to a boil. Lower the heat to medium. Place the shrimp in a steamer insert or mesh strainer on top of the pot of water and cover with a lid. Steam until the shrimp curl and turn bright pink, 4-6 minutes. Remove and set aside to cool
02 - To make the dressing, use a bowl large enough to hold all the salad ingredients. Whisk together the olive oil, lime juice, cumin, salt and pepper until emulsified
03 - Transfer the steam shrimp on top of the dressing. Add the shredded lettuce and red onions and combine with the dressing in the bowl. Tuck the sliced avocados around the shrimp and garnish with fresh cilantro
04 - Serve at room temperature or chilled

# Notes:

01 - Store leftovers in an airtight container for up to 2 days, best enjoyed within 24 hours to prevent avocados from browning
02 - Make dressing up to 2 weeks in advance. Pre-cooked shrimp can be used for convenience
03 - Green onions can substitute red onions. Paprika or coriander can replace cumin in the dressing
