02 - 1/2 pound raw shrimp, peeled and deveined
03 - 1 green onion, finely chopped
04 - 1 egg white

06 - 1 teaspoon soy sauce
07 - 1 teaspoon sesame oil
08 - 1/4 teaspoon fresh ginger, grated
09 - Pinch of salt
10 - Pinch of ground black pepper
11 - 2 tablespoons sesame seeds
12 - Vegetable oil for frying

# Steps:

01 - Combine shrimp, garlic, ginger, soy sauce, sesame oil, egg white, salt, and pepper in a food processor. Pulse until a cohesive but slightly chunky paste forms.
02 - Spread a generous layer of shrimp paste onto one slice of bread, then top with a second slice to form a sandwich. Gently press to adhere the filling and ensure a firm shape.
03 - Cut each sandwich into four equal squares. Lightly brush the top of each square with water, then press the moistened side into sesame seeds for an even coating.
04 - Heat approximately 1 inch of vegetable oil in a skillet over medium-high heat. Arrange squares sesame seed side down and fry for about 2 minutes per side, turning until uniformly golden and crisp. Transfer to a paper towel-lined plate to drain excess oil.
05 - Sprinkle with chopped chives or additional green onion. Serve hot accompanied by sweet chili sauce, sriracha mayo, or soy-vinegar dip.
