Scandinavian Almond Cake (Print Version)

# Ingredients:

→ Cake Base

01 - 1 1/4 cups all purpose flour (170g)
02 - 1/2 teaspoon baking powder
03 - 1/4 teaspoon salt
04 - 1 1/4 cup granulated sugar
05 - 1 large egg
06 - 1 1/2 teaspoons almond extract
07 - 2/3 cup half & half cream
08 - 1/2 cup salted butter, melted

→ Topping

09 - 1/4 cup sliced almonds
10 - Powdered sugar for garnish (optional)

# Instructions:

01 - Melt the butter and set aside to cool. Spray a 4.75 x 12.25 inch Rehrucken pan liberally with baking spray. Sprinkle the sliced almonds evenly across the bottom of the pan.
02 - Preheat your oven to 350°F (175°C).
03 - In a small bowl, whisk together the flour, baking powder, and salt. Set aside.
04 - In a large bowl, whisk the sugar, egg, almond extract, and cream until well combined. Add the dry ingredients and whisk until no streaks of flour remain.
05 - Pour in the melted butter and whisk until the batter is smooth and fully incorporated.
06 - Pour the batter into the prepared pan. Bake at 350°F (175°C) for 40-50 minutes, or until the edges are golden brown and the center is set.
07 - Allow cake to cool in the pan for 10-15 minutes, then carefully invert onto a wire cooling rack.
08 - Serve warm or at room temperature. If desired, dust lightly with powdered sugar before serving.
