Maple Butter Breakfast Sandwich (Print Version)

# Ingredients:

→ Sandwich Basics

01 - 8 oz pork sausage
02 - 4 large eggs
03 - 4 slices Cheddar cheese
04 - 4 English muffins, halved

→ Maple Butter

05 - 4 tablespoons salted butter, softened
06 - 1 tablespoon pure maple syrup

# Instructions:

01 - Shape the pork sausage into 4 even patties. Cook them in a large skillet sprayed with non-stick spray over medium-high heat for about 3-4 minutes per side, until they're golden brown and crispy around the edges. Once cooked, transfer the patties to a paper towel-lined plate to soak up any excess grease.
02 - Pour off the fat from the skillet, then return it to the stove and lower the heat to medium. In a bowl, whisk together the eggs with a pinch of salt and pepper, then pour the mixture into the skillet. Let the eggs cook until the top is almost set but still slightly glossy, then carefully fold the eggs over in half. Remove the skillet from the heat and let the residual warmth finish cooking the eggs.
03 - In a small bowl, whisk the softened butter until it's creamy and smooth. Stir in the maple syrup until well combined. While you're making the butter, toast the English muffins until they're lightly golden.
04 - Spread about 1 tablespoon of the maple butter on both halves of each English muffin. Place a portion of folded egg on the bottom half, then add a cooked sausage patty and a slice of cheese. Microwave for 20-30 seconds just to melt the cheese, then top with the other half of the English muffin. Repeat with the remaining ingredients to make all four sandwiches. Serve right away while everything's still warm and the cheese is melty.
