# Ingredients:

01 - 8 large eggs
02 - 1/4 cup whole milk
03 - Salt, to taste

05 - 8 pre-cooked breakfast sausage links
06 - 1 cup shredded cheddar cheese
07 - 8 flour tortillas, 8-inch diameter each

08 - 1 tablespoon unsalted butter
09 - Non-stick cooking spray or additional melted butter, for the skillet

# Steps:

01 - Crack eggs into a large mixing bowl. Add whole milk and whisk thoroughly until fully combined. Season with salt and ground black pepper according to preference.
02 - Heat a non-stick skillet over medium heat and add unsalted butter. Once the butter has melted, add the egg mixture. Cook slowly, stirring occasionally, until eggs are set but still tender. Remove skillet from heat.
03 - Gently warm flour tortillas in a clean, dry skillet or microwave for several seconds until soft and pliable.
04 - Lay a single tortilla flat. Position one sausage link near one edge. Spoon approximately one tablespoon of scrambled eggs over the sausage, followed by a portion of shredded cheddar cheese. Roll the tortilla firmly around the filling, folding in the ends to enclose. Repeat for remaining tortillas and fillings.
05 - Clean the skillet and lightly coat with non-stick cooking spray or melted butter. Place the rolled tortillas seam-side down in the skillet. Cook over medium heat for 2 to 3 minutes per side, or until tortillas are golden brown and cheese is melted.
06 - Serve roll-ups immediately while hot. Optional: Accompany with salsa, hot sauce, or preferred breakfast condiments.
