Spoon approximately 0.5 cup of the sausage and egg mixture onto the center of each flour tortilla. Sprinkle each with shredded cheddar cheese.

Heat the remaining 1 tablespoon butter in a nonstick skillet over medium heat. Place burritos seam side down and brown each side for 2 to 3 minutes, until golden and crisp.
