# Ingredients:

01 - 0.5 pound ground sausage
02 - 0.5 red bell pepper, diced
03 - 0.5 green bell pepper, diced
04 - 0.5 onion, diced
05 - 4 large eggs, beaten
06 - 0.5 cup shredded sharp cheddar cheese
07 - 2 green onions, sliced

08 - 4 large flour tortillas

09 - 2 tablespoons unsalted butter
10 - Salt, to taste
11 - Black pepper, to taste

# Steps:

01 - Cook ground sausage in a large skillet over medium heat. Break the meat into crumbles with a wooden spoon and cook until browned and fully cooked. Drain and discard excess grease if necessary.
02 - Add diced red bell pepper, green bell pepper, and onion to the skillet. Cook with the sausage until the vegetables are tender and fragrant, about 3 to 4 minutes.
03 - Transfer the cooked sausage and vegetable mixture to a medium bowl and set aside.
04 - Heat a nonstick skillet over medium heat and melt 1 tablespoon of the butter. Pour in beaten eggs and scramble gently until set, about 2 to 3 minutes.
05 - Add the cooked scrambled eggs to the bowl with the sausage and vegetable mixture. Stir gently to combine. Season with salt and black pepper to taste.
06 - Spoon approximately 0.5 cup of the sausage and egg mixture onto the center of each flour tortilla. Sprinkle each with shredded cheddar cheese.
07 - Fold in the sides of each tortilla and roll tightly to seal, placing the seam side down.
08 - Heat the remaining 1 tablespoon butter in a nonstick skillet over medium heat. Place burritos seam side down and brown each side for 2 to 3 minutes, until golden and crisp.
09 - Transfer burritos to warm plates and garnish with sliced green onions. Serve immediately.
