Heat a few inches of oil in a large saucepan over medium-low heat until it reaches 350°F (175°C). Line a plate with paper towels.

In a large bowl, whisk together the flour, sugar, baking powder, salt, cinnamon and nutmeg. In a small bowl, whisk together the milk, eggs, butter and vanilla. Stir the wet ingredients into the dry until just combined. Fold the chopped apples into the batter.

Once the oil is hot, drop 1/4 cup portions of batter into the oil, frying only 1 or 2 at a time. Fry until golden on both sides, about 3 to 4 minutes, flipping once or twice during cooking. Remove with a slotted spoon and place on paper towels to drain excess oil. Repeat with remaining batter.

Whisk the powdered sugar, vanilla and milk together until combined and smooth. If the mixture is too thick, add more milk 1 teaspoon at a time until it reaches dipping consistency.

Once the fritters are slightly cooled, dip them in the glaze. Place on parchment paper and immediately sprinkle with flaked sea salt. Serve while still warm.
