01 - Peelings from 3-4 large russet potatoes
02 - 1/2 tablespoon olive oil
03 - 1/2 teaspoon garlic powder
04 - 1 tablespoon fresh chopped rosemary
05 - 1/2 teaspoon sea salt

# Instructions:

01 - Preheat oven to 400°F (200°C).
02 - Place potato peelings on a large baking sheet. Drizzle with olive oil, then sprinkle garlic powder, rosemary, and sea salt over them. Toss to evenly coat and arrange in a single layer.
03 - Bake for 15-20 minutes or until crisp and golden, stirring halfway through cooking time.
04 - Sprinkle with additional fresh rosemary or chopped chives and serve immediately.
