Roasted Garlic Savory Dip (Print Version)

# Ingredients:

→ Dip Base

01 - 3 whole heads unpeeled garlic
02 - 1 tablespoon olive oil
03 - 120 millilitres sour cream
04 - 60 millilitres mayonnaise
05 - 1 green onion, finely chopped
06 - 1 tablespoon red wine vinegar
07 - 0.5 teaspoon salt
08 - 0.75 tablespoon ground black pepper

# Instructions:

01 - Set the oven to 150°C and allow it to preheat.
02 - Slice 0.5 centimetres from the top of each garlic head to expose the individual cloves. Trim any covered cloves as needed. Brush exposed garlic with olive oil and wrap each head in aluminium foil.
03 - Place the foil-wrapped garlic heads on a baking tray and roast for 60 minutes, until cloves are tender and caramelised. Remove from oven and leave to cool to room temperature.
04 - Once cooled, squeeze the roasted garlic cloves into a mixing bowl. Mash thoroughly with a wire whisk until smooth.
05 - Add sour cream, mayonnaise, chopped green onion, red wine vinegar, salt, and black pepper to the mashed garlic. Whisk until fully blended and mixture is creamy.
06 - Cover and refrigerate the dip for 2 to 4 hours to allow flavours to develop. Serve chilled.

01 - For best flavour, ensure the garlic is evenly roasted until golden and soft before blending with other ingredients.
