Reese’s Peanut Butter Cookie Bites (Print Version)

Mini peanut butter cookies with chocolate chips and a Reese’s cup center. Perfectly soft, chewy, and shareable.

# Ingredients:

→ Dough

01 - 115 g unsalted butter, softened
02 - 120 g creamy peanut butter
03 - 100 g granulated sugar
04 - 110 g packed brown sugar
05 - 1 large egg
06 - 1 teaspoon vanilla extract
07 - 155 g all-purpose flour
08 - 0.5 teaspoon baking soda
09 - 0.25 teaspoon salt
10 - 130 g mini chocolate chips

→ Filling

11 - 24 mini Reese’s peanut butter cups, unwrapped

# Steps:

01 - Preheat the oven to 175°C. In a large mixing bowl, cream together softened butter, creamy peanut butter, granulated sugar, and brown sugar until the mixture is smooth and fluffy. Beat in the egg and vanilla extract until incorporated.
02 - In a separate bowl, whisk together all-purpose flour, baking soda, and salt. Gradually add the dry ingredients to the creamed mixture, mixing until just combined. Gently fold in the mini chocolate chips for even distribution.
03 - Lightly grease a mini muffin pan. Roll dough into 2.5 cm balls and place each into a muffin cup. Bake in the preheated oven for 10 to 12 minutes, or until the tops are lightly golden brown.
04 - Immediately press a mini Reese’s peanut butter cup into the center of each cookie while still warm. Allow to cool in the pan for 10 minutes before transferring bites to a wire rack to cool completely.

01 - For the best texture, ensure butter and peanut butter are at room temperature before mixing.
