Creamy Rasta Pasta (Print Version)

# Ingredients:

01 - 16 ounces (450g) dried pasta - penne works best but rigatoni or fusilli are great too
02 - 2 large chicken breasts or 2 cups shredded rotisserie chicken
03 - 3 colorful bell peppers, sliced into strips
04 - ½ cup fresh green onions, sliced
05 - 2-3 cloves garlic, minced

→ Sauce & Seasonings

06 - 3 tablespoons jerk seasoning (divided)
07 - 2 tablespoons vegetable oil (divided)
08 - ¼ cup vegetable or chicken stock
09 - ½ cup heavy cream or half and half
10 - ½ cup freshly grated parmesan cheese

# Instructions:

01 - Cook pasta according to package instructions until al dente. It will continue cooking slightly when mixed with the sauce later, so don't overcook it.
02 - If using raw chicken breast, cut into cubes and toss with 1.5 tablespoons of jerk seasoning. Heat 1 tablespoon vegetable oil in a heavy-bottomed pot over medium heat and cook chicken until golden and cooked through. Remove from pot and set aside. (Skip this step if using pre-cooked rotisserie chicken.)
03 - In the same pot, add the remaining tablespoon of vegetable oil. Sauté the bell peppers and green onions for about 3-4 minutes until slightly softened. Add the minced garlic and cook for another 30 seconds until fragrant.
04 - Sprinkle the remaining 1.5 tablespoons of jerk seasoning into the pot with the vegetables. Pour in the heavy cream and vegetable stock, then add the cooked chicken back to the pot. Let everything simmer for 3-4 minutes until the sauce begins to thicken.
05 - Stir the grated parmesan cheese into the sauce until melted and smooth. Add the cooked pasta to the pot and toss until everything is well coated in the creamy sauce. Garnish with additional chopped green onions or fresh parsley before serving.
