Poached Egg Avocado Toast (Print Version)

# Ingredients:

01 - 2 fresh eggs
02 - 2 slices whole grain bread
03 - 1/3 ripe avocado
04 - 2 tablespoons shaved Parmesan cheese
05 - Salt and pepper to taste
06 - Fresh herbs (parsley, thyme, or basil)
07 - Heirloom tomatoes, quartered

# Instructions:

01 - Bring water to boil in a pot (enough to cover eggs). Place two mason jar outer rims flat on bottom
02 - Turn off heat, crack eggs into rims. Cover and cook 5 minutes (4 minutes for very runny, 4:30 for soft, 5+ for firmer yolks)
03 - While eggs cook, toast bread and mash avocado onto each slice
04 - Remove eggs with spatula, take off rims, place on toast. Top with Parmesan, salt, pepper, herbs. Serve with tomatoes
