Bring water to boil in a pot (enough to cover eggs). Place two mason jar outer rims flat on bottom

Turn off heat, crack eggs into rims. Cover and cook 5 minutes (4 minutes for very runny, 4:30 for soft, 5+ for firmer yolks)

While eggs cook, toast bread and mash avocado onto each slice

Remove eggs with spatula, take off rims, place on toast. Top with Parmesan, salt, pepper, herbs. Serve with tomatoes
