Preheat a panini press, George Foreman grill, or grill pan over medium heat.

Slice bread thickly or hollow out some of the ciabatta crumb if desired. Spread pizza sauce evenly over the cut sides.

Layer mozzarella slices and pepperoni onto the bottom halves of the bread, then top with remaining bread.

Lightly spray the exterior crust with olive oil spray.

Place assembled sandwich onto the preheated press or grill. For a grill pan, set a heavy skillet on top to press. Cook for 3 to 4 minutes per side until bread is golden and cheese is melted.

Remove from heat and allow to cool for 1 to 2 minutes before slicing and serving.
