Add ingredients to a blender in this order: milk, water, flour, salt, butter, and eggs. Blend on medium for 5 seconds, scrape the sides, then blend for another 5 seconds. Be careful not to over-mix. For best results, let the batter rest for 30 minutes at room temperature or up to 48 hours in the fridge.

While the batter rests, grate the mozzarella cheese, prepare the pizza sauce, and chop any additional toppings you'll be using.

Heat a pan over medium heat and lightly butter it. Pour 1/4 cup of batter into the center, quickly lift and rotate the pan to spread the batter evenly. Cook until the edges look dry (about 1 minute), then gently flip and cook another 30-60 seconds. Stack crepes on a plate as you go.

Spread 1 teaspoon of pizza sauce on the left third of each crepe, sprinkle with 2 tablespoons cheese and add your chosen toppings. Roll or fold to enclose the filling. Brown each filled crepe in a buttered pan for about 2 minutes per side until crispy and the cheese melts.
