Pineapple Coconut Mojito Mocktail (Print Version)

# Ingredients:

01 - 0.25 lime, cut into two segments
02 - 6 fresh mint leaves
03 - 120 ml coconut water
04 - 240 ml pineapple juice, no added sugar
05 - Honey, as needed for rimming
06 - Desiccated coconut, dry toasted, as needed for rimming
07 - Pineapple wedges, for garnish
08 - Ice cubes, as needed

# Instructions:

01 - Toast desiccated coconut in a dry pan over low heat, stirring frequently, until lightly golden. Remove from heat and set aside to cool.
02 - Spread honey on a shallow plate. Dip the rim of each serving glass into the honey, then press into the toasted coconut to coat evenly.
03 - Place one lime segment and three fresh mint leaves into each prepared glass. Gently muddle with a pestle or spoon to release the mint oils and lime juice.
04 - Fill the glasses with ice cubes. Evenly divide coconut water and pineapple juice between the glasses, pouring over the muddled ingredients.
05 - Garnish each glass with a wedge of fresh pineapple and serve immediately while chilled.
