01 - 1 pound lean ground beef (93% lean, 7% fat)
02 - 4 tablespoons smoky barbecue sauce, divided
03 - 0.5 teaspoon salt
04 - 0.25 teaspoon ground black pepper
05 - 8 slices smoked bacon, uncooked
06 - 4 slices fresh pineapple, 0.5 inch thick, cored
07 - 4 brioche style burger buns

# Instructions:

01 - Preheat oven to 400°F (204°C). Line a large rimmed baking sheet with aluminum foil and place an oven-safe wire rack on top.
02 - In a large bowl, gently mix ground beef with 2 tablespoons barbecue sauce, salt, and black pepper. Mix just until evenly distributed to prevent overworking the meat.
03 - Portion the beef mixture into four equal parts. Shape each into a patty about 4 ounces, 3.5 inches in diameter, and 0.5 inch thick.
04 - Arrange two bacon slices in an X on a work surface. Place one patty in the center, position one pineapple slice atop the patty, then wrap the bacon ends over. Secure with a toothpick.
05 - Repeat bacon-wrapping with remaining patties. Position each assembled burger on the prepared wire rack.
06 - Bake for 15 minutes. Remove pan, brush tops and sides with remaining 2 tablespoons barbecue sauce. Return to oven and bake 10-15 minutes longer, until bacon is browned and burgers reach 160°F (71°C) internal temperature.
07 - While burgers finish cooking, optionally toast burger buns until lightly golden.
08 - Allow burgers to rest 5 minutes for juices to redistribute. Serve each patty and pineapple portion on a toasted bun with desired condiments.
