Spoon approximately 1/2 teaspoon of pizza sauce onto each cracker. Spread gently, leaving a narrow border around the edge. Avoid excess sauce to maintain crispness.

Sprinkle a pinch of shredded mozzarella over the sauce on each cracker. Place one pepperoni slice per cracker. Add additional mozzarella or a touch of Parmesan on top as desired.

Dust the tops with Italian seasoning, garlic powder, and a light pinch of crushed red pepper flakes if desired.

Transfer the baking sheet to the oven. Bake for 8 to 10 minutes, until the cheese is melted, bubbly, and beginning to brown. Monitor closely to prevent over-browning.

Remove crackers from oven and cool for 2 to 3 minutes. Before serving, garnish with fresh chopped basil or parsley and sprinkle with extra Parmesan.
