# Ingredients:

→ Quesadilla Base

01 - 8 flour tortillas
02 - 1/2 to 1 cup marinara sauce
03 - 1 cup shredded mozzarella cheese
04 - 4 to 6 ounces pepperoni slices

→ Vegetable Filling

05 - 1 teaspoon olive oil or unsalted butter
06 - 1/4 cup diced onion
07 - 1/4 to 1/2 cup diced bell peppers
08 - 1/2 teaspoon dried Italian seasoning
09 - 1/2 teaspoon dried basil
10 - Salt, to taste
11 - Black pepper, to taste

# Steps:

01 - Heat olive oil in a skillet over medium-high heat. Add diced onion and bell peppers. Season with Italian seasoning, dried basil, salt, and black pepper. Sauté for 3 to 4 minutes or until vegetables are softened. Remove from skillet and reserve.
02 - Spread marinara sauce evenly over one side of each tortilla. Evenly distribute the sautéed vegetables, pepperoni slices, and mozzarella cheese over four tortillas. Cover with the remaining tortillas to form sandwich-style quesadillas.
03 - Return skillet to medium heat. Cook each quesadilla for 2 to 3 minutes per side, pressing gently with a spatula, until tortillas are golden and cheese is fully melted.
04 - Remove quesadillas from skillet and let rest for 1 minute. Slice each into wedges and serve warm. Offer additional marinara sauce for dipping if desired.
