Spread marinara sauce evenly over one side of each tortilla. Evenly distribute the sautéed vegetables, pepperoni slices, and mozzarella cheese over four tortillas. Cover with the remaining tortillas to form sandwich-style quesadillas.

Return skillet to medium heat. Cook each quesadilla for 2 to 3 minutes per side, pressing gently with a spatula, until tortillas are golden and cheese is fully melted.

Remove quesadillas from skillet and let rest for 1 minute. Slice each into wedges and serve warm. Offer additional marinara sauce for dipping if desired.
