01 - 1 large egg white
02 - 1 tablespoon water
03 - 1 pound pecan halves (approximately 4 cups)
04 - 3/4 cup granulated sugar
05 - 1 teaspoon ground cinnamon
06 - 1 teaspoon salt

# Steps:

01 - Set oven temperature to 250°F (120°C) and allow to preheat fully.
02 - In a large mixing bowl, vigorously beat the egg white with water until frothy.
03 - Add pecan halves to the frothy egg white mixture and stir until all pieces are evenly coated.
04 - In a separate small bowl, combine granulated sugar, ground cinnamon, and salt; mix thoroughly to ensure even distribution.
05 - Sprinkle the sugar mixture over the coated pecans and mix until every pecan is well covered.
06 - Spread the coated pecans in a single, even layer on an ungreased baking sheet.
07 - Place the baking sheet in the preheated oven and bake for 1 hour, stirring and redistributing the pecans every 15 minutes to promote uniform caramelization.
08 - Remove the baking sheet from the oven and allow pecans to cool completely on the pan.
09 - Transfer cooled pecans to an airtight container and store at room temperature.
