Pear Vanilla Gin Fizz (Print Version)

# Ingredients:

→ Pear Vanilla Syrup

01 - 1 cup finely chopped or blended Bartlett pears
02 - ½ cup organic sugar
03 - ½ cup water
04 - ¼ cup vanilla syrup

→ For One Cocktail

05 - 45ml (1½ oz) gin
06 - 2 tablespoons pear vanilla syrup
07 - ¾ cup soda water
08 - Crushed ice, to top

# Instructions:

01 - Finely chop or blend the pears. Add pears, sugar, water, and vanilla syrup to a small saucepan over medium heat.
02 - Bring mixture to a boil, then reduce to a simmer and cook for 5-8 minutes until liquid turns amber and pears break down. Stir frequently for even cooking.
03 - Remove from heat and strain the syrup into a container. Press any remaining liquid out of the pear solids with a spoon.
04 - Discard the pear solids or optionally blend them into a puree for stronger flavor. Allow syrup to cool to room temperature before using.
05 - In an 8 oz glass, combine 45ml gin with 2 tablespoons of pear vanilla syrup and whisk together. Add ¾ cup soda water, top with crushed ice, and stir gently.

# Notes:

01 - A rim of sugar and vanilla bean around the glass makes an elegant addition to this cocktail.
