Finely chop or blend the pears. Add pears, sugar, water, and vanilla syrup to a small saucepan over medium heat.

Bring mixture to a boil, then reduce to a simmer and cook for 5-8 minutes until liquid turns amber and pears break down. Stir frequently for even cooking.

Remove from heat and strain the syrup into a container. Press any remaining liquid out of the pear solids with a spoon.

Discard the pear solids or optionally blend them into a puree for stronger flavor. Allow syrup to cool to room temperature before using.

In an 8 oz glass, combine 45ml gin with 2 tablespoons of pear vanilla syrup and whisk together. Add ¾ cup soda water, top with crushed ice, and stir gently.
