01 -
In a medium bowl, combine the full fat Greek yogurt, peanut butter powder, peanut butter, and maple syrup. Stir thoroughly until all ingredients are well incorporated and the mixture is smooth and creamy.
02 -
Line a small baking tray or plate with parchment paper. Using a medium cookie scoop or tablespoon, portion the yogurt mixture onto the lined surface, creating approximately 6 equal-sized mounds. Shape into neat rounds if desired.
03 -
Place the tray of yogurt bites in the freezer for 10-20 minutes, or until they are completely solid to the touch. They need to be firm enough to handle for dipping.
04 -
While the yogurt bites are freezing, add the dark chocolate chips and coconut oil to a microwave-safe bowl. Heat in 30-second intervals, stirring between each interval, until completely melted and smooth.
05 -
Remove the frozen yogurt bites from the freezer. One at a time, dip each yogurt bite into the melted chocolate, using a fork to help coat it completely. Allow excess chocolate to drip off before returning it to the parchment paper.
06 -
While the chocolate is still wet, sprinkle each bite with a small amount of flaky sea salt if desired. This adds a delicious sweet-salty contrast.
07 -
Place the chocolate-coated bites in the refrigerator until the chocolate has completely set, about 5-10 minutes. Once set, transfer to an airtight container and store in the refrigerator for 3-4 days.
