Chocolate Peanut Butter Bites (Print Version)

# Ingredients:

→ Yogurt Filling

01 - ½ cup full fat Greek yogurt
02 - ¼ cup peanut butter powder (PB Fit, PB2 or Clean Simple Eats powdered peanut butter)
03 - 1 Tablespoon peanut butter
04 - ½ tablespoon maple syrup

→ Chocolate Coating

05 - ½ cup Lily's dark chocolate chips
06 - 1 teaspoon coconut oil
07 - Flaky sea salt for topping (optional)

# Instructions:

01 - In a medium bowl, combine the full fat Greek yogurt, peanut butter powder, peanut butter, and maple syrup. Stir thoroughly until all ingredients are well incorporated and the mixture is smooth and creamy.
02 - Line a small baking tray or plate with parchment paper. Using a medium cookie scoop or tablespoon, portion the yogurt mixture onto the lined surface, creating approximately 6 equal-sized mounds. Shape into neat rounds if desired.
03 - Place the tray of yogurt bites in the freezer for 10-20 minutes, or until they are completely solid to the touch. They need to be firm enough to handle for dipping.
04 - While the yogurt bites are freezing, add the dark chocolate chips and coconut oil to a microwave-safe bowl. Heat in 30-second intervals, stirring between each interval, until completely melted and smooth.
05 - Remove the frozen yogurt bites from the freezer. One at a time, dip each yogurt bite into the melted chocolate, using a fork to help coat it completely. Allow excess chocolate to drip off before returning it to the parchment paper.
06 - While the chocolate is still wet, sprinkle each bite with a small amount of flaky sea salt if desired. This adds a delicious sweet-salty contrast.
07 - Place the chocolate-coated bites in the refrigerator until the chocolate has completely set, about 5-10 minutes. Once set, transfer to an airtight container and store in the refrigerator for 3-4 days.

# Notes:

01 - These treats combine the protein-rich benefits of Greek yogurt with the flavor of peanut butter in a chocolate-coated bite-sized dessert.
02 - For best results, keep these bites refrigerated as they will soften at room temperature.
03 - Lily's dark chocolate chips are used in this recipe as they're sweetened with stevia, making these treats lower in sugar.
04 - The flaky sea salt is optional but highly recommended for a gourmet sweet-salty flavor combination.
