# Ingredients:

01 - 1 pound 12 ounces ripe yellow peaches, peeled and sliced
02 - 7 ounces caster sugar
03 - 1 tablespoon freshly squeezed lemon juice, or to taste

# Instructions:

01 - Slice the peeled peaches into eighths for even processing.
02 - Place sliced peaches and caster sugar in the bowl of a food processor and blend until completely smooth, scraping down the sides as necessary.
03 - Incorporate the lemon juice gradually, tasting as you go until the desired brightness is achieved.
04 - Transfer the peach purée to a freezer-safe container and freeze for 6 to 7 hours, or until firm throughout.
