Preheat oven to 190°C. Grease a 23×33 cm baking dish with cooking spray or butter.

Brown sausage in a skillet over medium heat until thoroughly cooked. Drain excess fat and set aside.

In a large bowl, combine pancake mix, milk, egg, vanilla extract, melted butter, maple syrup, and cinnamon, mixing just until incorporated. Do not overmix.

Pour half the batter into the prepared dish. Evenly scatter the cooked sausage over the batter.

Sprinkle shredded cheddar cheese over sausage if using. Pour remaining batter over the top.

Bake in the preheated oven for 25–30 minutes, or until golden brown and a toothpick inserted into the centre comes out clean.
