One Pot French Onion Pasta (Print Version)

Caramelized onions and Gruyere blend with pasta and herbs for a rich, French-inspired one-pot meal.

# Ingredients:

→ Base

01 - 3 tablespoons olive oil
02 - 2 tablespoons unsalted butter
03 - 3 large yellow onions, sliced into 1/8-inch rings
04 - 1/8 teaspoon salt
05 - 1/8 teaspoon black pepper

→ Aromatics

06 - 4 garlic cloves, minced
07 - 1/4 teaspoon red pepper flakes

→ Seasonings and Sauces

08 - 1 tablespoon Worcestershire sauce
09 - 1 tablespoon soy sauce
10 - 2 tablespoons beef bouillon
11 - 1 tablespoon fresh parsley, minced
12 - 2 teaspoons fresh thyme, minced
13 - 1/2 teaspoon dried oregano
14 - 1/2 teaspoon paprika
15 - 1/2 teaspoon black pepper

→ Liquids

16 - 5 1/2 cups water
17 - 1 (12 ounce) can evaporated milk

→ Thickener

18 - 1/2 tablespoon cornstarch

→ Pasta

19 - 1 pound short cut pasta, uncooked

→ Cheeses

20 - 5 ounces Gruyere cheese, freshly shredded
21 - 1/4 cup Parmesan cheese, freshly shredded

→ Garnish

22 - Fresh parsley, chopped (optional)

# Steps:

01 - Melt unsalted butter with olive oil in a large Dutch oven over medium heat. Add sliced onions, salt, and black pepper. Cook, stirring occasionally, until onions are deeply caramelized and dark golden brown, 30 to 35 minutes.
02 - Stir in minced garlic and red pepper flakes. Add soy sauce and Worcestershire sauce. Cook, stirring continuously, for 30 seconds until fragrant.
03 - Pour in water and half of the evaporated milk. In a separate bowl, whisk cornstarch with the remaining evaporated milk. Stir the cornstarch mixture into the pot. Increase heat to high and bring to a boil.
04 - Add beef bouillon, minced parsley, thyme, dried oregano, paprika, and additional black pepper. Mix well to incorporate all seasonings into the liquid.
05 - Add the uncooked short cut pasta. Reduce heat to a medium-high simmer. Cook, stirring often, for 20 to 25 minutes or until pasta is al dente and some excess liquid remains.
06 - Remove from heat. Gradually add shredded Gruyere cheese by the handful, stirring until fully melted and integrated. Mix in Parmesan cheese until smooth. Taste and adjust seasoning with salt and pepper as needed.
07 - Spoon into bowls and garnish with chopped fresh parsley if desired. Serve hot.
