In a large pot over medium heat, cook the chopped bacon until evenly crispy. Remove bacon and set aside on a paper towel-lined plate.
02 -
Drain excess fat, leaving about 1 teaspoon of bacon grease in the pot. Add ground beef, diced onion, and minced garlic. Sauté until beef is browned and onions are softened. Drain any remaining grease.
03 -
Add the burger seasoning and Worcestershire sauce. Stir and cook for 1 to 2 minutes, allowing flavors to develop.
04 -
Stir in the tomato paste and cook an additional 1 to 2 minutes.
05 -
Add dill pickle relish, mustard, and tomato sauce. Mix thoroughly to combine.
06 -
Stir in the uncooked rice and beef broth. Bring mixture to a boil, then reduce heat to low. Cover and simmer for 18 to 20 minutes or until the rice is tender and liquid is absorbed.
07 -
Remove pot from heat. Stir in 1 cup shredded cheese and the reserved bacon. Sprinkle remaining cheese over the top, cover, and let stand for 3 to 5 minutes until the cheese is melted.
