Heat a large nonstick pan over medium-low heat and spray with cooking spray.

Beat the eggs, season with salt and pepper, then pour them evenly across the surface of the pan. Immediately place a slice of bread in the egg mixture, then flip it over. Repeat with the second slice.

One the eggs are just barely set (a minute or so), use a spatula to flip the eggs and both slices of bread over.

Place your cheese and meat on one of the pieces of bread, then flip the overhanging bits of egg onto the bread too.

Flip one piece of bread onto the other. (The piece without toppings will be easier to flip!) Continue cooking until both sides of the sandwich are browned and the cheese is melted.
