Sweet Coconut Energy Balls (Print Version)

# Ingredients:

01 - 1 1/2 cups unsweetened shredded coconut
02 - 3 tbsp pure maple syrup, honey, or agave nectar
03 - 3 tbsp coconut oil
04 - 1/4 tsp pure vanilla extract (optional)
05 - 1/8 tsp salt (optional)

# Instructions:

01 - Blend all ingredients in a blender or food processor until well combined. Do not mix by hand as the balls won't hold their shape.
02 - Roll the mixture into small balls. If desired, roll the formed balls in additional shredded coconut for coating.
03 - Place balls on a parchment or wax-lined plate. Refrigerate or freeze until hardened.
04 - Once hardened, optionally dip balls in melted chocolate for an extra layer of flavor.
05 - Keep any leftovers refrigerated or frozen in an airtight container.

# Notes:

01 - Coconut oil naturally melts at room temperature and may get on your hands during rolling, but it's great for your skin.
