Blend all ingredients in a blender or food processor until well combined. Do not mix by hand as the balls won't hold their shape.

Roll the mixture into small balls. If desired, roll the formed balls in additional shredded coconut for coating.

Place balls on a parchment or wax-lined plate. Refrigerate or freeze until hardened.

Once hardened, optionally dip balls in melted chocolate for an extra layer of flavor.

Keep any leftovers refrigerated or frozen in an airtight container.
