Nacho Cheese Beef Enchilada (Print Version)

Crispy chips, seasoned beef, and gooey cheese baked into a comforting Mexican-inspired dish.

# Ingredients:

01 - 1 bag nacho cheese flavored tortilla chips
02 - 2 tablespoons vegetable oil
03 - 1 pound lean ground beef
04 - 1/4 teaspoon kosher salt
05 - 1/4 teaspoon freshly ground black pepper

→ Vegetables and Aromatics

06 - 1 jalapeño, seeded and diced
07 - 1 small yellow onion, diced
08 - 2 cloves garlic, minced

→ Sauce and Cheese

09 - 20 ounces red enchilada sauce
10 - 3 cups shredded Mexican cheese blend
11 - 1/4 cup Cotija cheese, crumbled

→ Garnishes

12 - 2 tablespoons fresh cilantro, chopped
13 - Lime wedges, for serving

# Steps:

01 - Preheat oven to 375°F (190°C).
02 - Heat oil in a large skillet over medium-high heat. Add ground beef, season with salt and pepper, and cook, breaking up meat, until browned. Stir in jalapeño, onion, and garlic; cook until vegetables are softened.
03 - Pour in red enchilada sauce and stir to evenly coat the beef mixture. Simmer briefly until heated through.
04 - Lightly crush tortilla chips. Spread half the chips in a greased 9x13 inch (23x33 cm) baking dish. Top with half of the beef mixture and half of the shredded Mexican cheese blend. Repeat layering with remaining chips, beef mixture, and shredded cheese.
05 - Cover the baking dish with foil and bake for 30 minutes.
06 - Remove foil and bake an additional 10 to 15 minutes, or until the casserole is bubbling and top is lightly golden.
07 - Allow casserole to rest for 5 minutes. Sprinkle crumbled Cotija cheese and chopped cilantro over the top. Serve with lime wedges on the side.

# Notes:

01 - Crush the tortilla chips just enough to provide texture without turning them into crumbs. For added depth of flavor, roast the jalapeño before dicing.
