Peel the onions and slice both into 1-centimetre thick rings. Gently separate the onion rings. Slice mozzarella cheese into 4 uniform strips. Nest a smaller onion ring inside a larger one, filling the gap with mozzarella strips, layering cheese as needed. Repeat for remaining onions and cheese. Arrange the stuffed rings on a tray and freeze for 1 hour until firm.

Set up three separate bowls: fill one with plain flour, another with beaten eggs, and a third with breadcrumbs. Remove the chilled onion-mozzarella rings from the freezer.

Coat each frozen stuffed onion ring in flour, then dip into beaten eggs, and completely cover with breadcrumbs. For a crunchier result, repeat the egg and breadcrumb coating. Place breaded rings back in the freezer until ready to fry.

Heat vegetable oil in a deep pot to 175°C. Carefully lower the breaded onion rings into the hot oil in batches. Fry, turning occasionally, until they turn golden brown. Remove with a slotted spoon and drain on paper towels to remove excess oil.

Serve the hot mozzarella onion rings immediately with marinara sauce for dipping.
