Mini Apple Fritter Waffle Donuts (Print Version)

# Ingredients:

→ Apple Filling

01 - 1 and 1/2 cups peeled and finely diced apples
02 - 2 tablespoons unsalted butter
03 - 2 tablespoons packed brown sugar
04 - 1 teaspoon ground cinnamon
05 - 1/4 teaspoon ground nutmeg
06 - 1 teaspoon pure vanilla extract

→ Waffle Donut Batter

07 - 2 cups all-purpose flour
08 - 1/4 cup granulated sugar
09 - 2 teaspoons baking powder
10 - 1/2 teaspoon baking soda
11 - 1/2 teaspoon salt
12 - 1 and 1/2 teaspoons ground cinnamon
13 - 2 large eggs
14 - 3/4 cup whole milk
15 - 1/4 cup melted unsalted butter
16 - 1/4 cup sour cream or plain Greek yogurt
17 - 1 teaspoon pure vanilla extract

→ Vanilla Glaze

18 - 1 and 1/2 cups powdered sugar
19 - 2 to 3 tablespoons whole milk
20 - 1/2 teaspoon pure vanilla extract

# Steps:

01 - Melt butter in a small skillet over medium heat. Add diced apples, brown sugar, cinnamon, and nutmeg. Cook for 4 to 5 minutes, stirring occasionally, until apples are slightly softened and coated in syrup.
02 - Remove skillet from heat and stir in vanilla extract. Allow mixture to cool slightly before using.
03 - In a large mixing bowl, combine flour, granulated sugar, baking powder, baking soda, salt, and cinnamon. In a separate bowl, whisk eggs with milk, melted butter, sour cream, and vanilla extract. Gently fold wet ingredients into dry ingredients until just combined. Incorporate apple filling.
04 - Preheat waffle iron or mini waffle maker according to manufacturer’s instructions. Lightly grease with butter or nonstick spray.
05 - Portion batter into preheated waffle iron, using enough to cover the surface but without overfilling. Close the lid and cook for 3 to 4 minutes, or until golden brown and crisp. Remove and repeat until batter is used.
06 - Whisk powdered sugar, milk, and vanilla extract together in a bowl until smooth and pourable.
07 - Dip each warm waffle donut into the glaze or drizzle glaze over the tops. Allow glaze to set for several minutes before serving.
