In a large mixing bowl, combine flour, granulated sugar, baking powder, baking soda, salt, and cinnamon. In a separate bowl, whisk eggs with milk, melted butter, sour cream, and vanilla extract. Gently fold wet ingredients into dry ingredients until just combined. Incorporate apple filling.

Preheat waffle iron or mini waffle maker according to manufacturer’s instructions. Lightly grease with butter or nonstick spray.

Portion batter into preheated waffle iron, using enough to cover the surface but without overfilling. Close the lid and cook for 3 to 4 minutes, or until golden brown and crisp. Remove and repeat until batter is used.
