Mexican White Trash Casserole (Print Version)

# Ingredients:

01 - 1 pound ground beef
02 - 1 can (15 ounces) black beans, drained and rinsed
03 - 1 can (15 ounces) corn, drained
04 - 1 can (10 ounces) diced tomatoes with green chilies
05 - 1 teaspoon taco seasoning
06 - Salt and pepper to taste

07 - 1 package (8 ounces) cream cheese, softened
08 - 1 cup sour cream
09 - 2 cups shredded cheddar cheese

→ Additional

10 - 1 package (8 ounces) tortilla chips
11 - Chopped green onions for garnish

# Instructions:

01 - Preheat oven to 350°F (175°C). Brown ground beef in a large skillet over medium heat until fully cooked, then drain excess fat.
02 - Add black beans, corn, diced tomatoes with green chilies, taco seasoning, salt, and pepper to the cooked beef. Simmer for 5 minutes until well combined.
03 - In a separate bowl, combine softened cream cheese and sour cream until smooth and well incorporated.
04 - In a greased 9x13-inch baking dish, create layers starting with half the tortilla chips, then half the beef mixture, followed by half the cream cheese mixture, and 1 cup of shredded cheddar. Repeat layers with remaining ingredients, finishing with cheese on top.
05 - Cover baking dish with aluminum foil and bake for 25 minutes. Remove foil and continue baking for 10-15 minutes until cheese is bubbly and golden.
06 - Allow to cool for a few minutes before garnishing with chopped green onions. Serve warm.
