Melty Blackberry Jalapeno Chicken (Print Version)

Chicken breasts filled with blackberries, jalapeno, cream cheese, and honey, baked until golden and melty.

# Ingredients:

→ Chicken

01 - 4 boneless, skinless chicken breasts
02 - 1 tablespoon olive oil
03 - 1/2 teaspoon salt
04 - 1/2 teaspoon black pepper
05 - 1/2 teaspoon garlic powder
06 - 1/2 teaspoon smoked paprika

→ Filling

07 - 1 cup fresh blackberries, roughly chopped
08 - 1 small jalapeno, finely diced, seeds removed for less heat
09 - 4 ounces cream cheese, softened
10 - 1/2 cup shredded mozzarella cheese
11 - 1 tablespoon honey
12 - Pinch of salt

13 - Extra blackberries for garnish
14 - Chopped fresh cilantro or parsley

# Steps:

01 - Preheat oven to 375°F (190°C). Lightly grease a baking dish with olive oil or non-stick cooking spray.
02 - In a small bowl, combine chopped fresh blackberries, diced jalapeno, softened cream cheese, shredded mozzarella, honey, and a pinch of salt. Mix until smooth and evenly combined.
03 - Carefully slice a pocket into the thickest side of each chicken breast using a sharp knife, ensuring not to cut all the way through.
04 - Spoon the blackberry jalapeno filling into the pocket of each chicken breast. Use toothpicks or kitchen twine to seal the openings as needed.
05 - Season the outside of each stuffed chicken breast with salt, black pepper, garlic powder, and smoked paprika.
06 - Heat 1 tablespoon olive oil in a skillet over medium-high heat. Sear stuffed chicken breasts for 2 to 3 minutes on each side until golden brown. Transfer to prepared baking dish.
07 - Place the baking dish in preheated oven. Bake for 20 to 25 minutes, or until chicken reaches an internal temperature of 165°F (74°C) and filling is hot and bubbling.
08 - Allow chicken to rest for 5 minutes. Garnish with fresh blackberries and chopped herbs such as cilantro or parsley. Slice and serve with preferred accompaniments.

# Notes:

01 - Use toothpicks or kitchen twine to keep the filling inside the chicken during cooking.
02 - Removing the seeds from the jalapeno will reduce the heat; adjust to taste.
