Place butter, confectioners’ sugar, all-purpose flour, and cornstarch in a large mixing bowl.

With a stand mixer or hand mixer, begin mixing on low speed, then increase to medium. Whip ingredients together for approximately 10 minutes until the mixture is extremely pale, light, and fluffy.

Using a spoon, drop portions of the whipped dough onto an ungreased or parchment-lined baking sheet, spacing evenly.

If desired, press a maraschino cherry into the center of each portioned dough mound.

Bake in a preheated oven at 325°F (165°C) for 20 minutes, or until set and very pale golden on the bottom.

Transfer baked cookies to a wire rack and allow to cool completely before serving.
