Mediterranean Quesadillas with Feta (Print Version)

Crisp tortillas with spinach, tomato, feta and mozzarella offer a savory Mediterranean twist.

# Ingredients:

→ Vegetables

01 - 1 medium tomato, diced
02 - 1/3 cup diced red onion
03 - 1 cup chopped fresh spinach

→ Cheese

04 - 1/2 cup crumbled feta cheese
05 - 1 cup shredded mozzarella cheese

→ Grains

06 - 3 large burrito style flour tortillas

# Steps:

01 - In a medium bowl, combine the diced tomato, red onion, chopped spinach, feta cheese, and mozzarella cheese. Mix until evenly distributed.
02 - Place one third of the filling mixture onto one side of each tortilla. Fold each tortilla in half to enclose the filling.
03 - Heat 1 tablespoon of oil in a large skillet or on a griddle over medium heat. Place the folded tortillas onto the cooking surface. Cook each side for 3 to 4 minutes, pressing gently with a spatula, until golden brown and the cheese has melted.
04 - Cut each quesadilla into four wedges using a sharp knife or pizza cutter. Serve immediately while hot.
