# Ingredients:

01 - 1 pound ground beef

02 - 1/2 cup chopped onion
03 - 2 cloves garlic, minced
04 - 1 cup mixed bell peppers (green, red, yellow), sliced
05 - 1 cup zucchini, sliced
06 - 1 cup cherry tomatoes, halved

→ Oils & Seasonings

07 - 2 tablespoons olive oil
08 - 1 teaspoon dried oregano
09 - 1 teaspoon dried thyme
10 - Salt and freshly ground black pepper

→ Garnishes

11 - 1/4 cup crumbled feta cheese (optional)
12 - Fresh parsley, chopped (optional)

# Instructions:

01 - Chop the onion, mince the garlic, and slice the bell peppers, zucchini, and cherry tomatoes. Set aside.
02 - Heat 1 tablespoon of olive oil in a large skillet or wok over medium-high heat. Add the ground beef and cook until browned, breaking it into small pieces as it cooks.
03 - Once the beef is browned, add the chopped onion and minced garlic to the skillet. Cook until the onion is translucent and the garlic is fragrant, about 2-3 minutes.
04 - Add the sliced bell peppers, zucchini, and cherry tomatoes to the skillet. Drizzle with remaining olive oil and cook until the vegetables are tender-crisp, about 5-7 minutes.
05 - Stir in the dried oregano and thyme. Season with salt and pepper to taste, adjusting seasonings as needed.
06 - Transfer to serving plates or bowls while hot. Top with crumbled feta cheese and chopped fresh parsley if desired.
