# Ingredients:

01 - 4 slices artisan bread (sourdough, ciabatta, or whole grain)
02 - 2 tablespoons unsalted butter, softened
03 - 1/2 cup shredded mozzarella cheese
04 - 1/4 cup crumbled feta cheese
05 - 2 tablespoons sun-dried tomatoes, chopped
06 - 1/4 cup Kalamata olives, sliced
07 - Fresh basil leaves, several sprigs per sandwich
08 - 1 teaspoon dried oregano, optional

09 - Roasted red peppers
10 - Baby spinach or arugula
11 - Grilled eggplant or zucchini slices

# Steps:

01 - Spread softened butter evenly on one side of each bread slice to ensure a crisp, golden exterior.
02 - Lay two slices of bread butter-side down and evenly sprinkle half of the shredded mozzarella over each unbuttered side.
03 - Distribute sun-dried tomatoes, sliced Kalamata olives, and fresh basil leaves atop the mozzarella.
04 - Sprinkle crumbled feta cheese and dried oregano, if using, over the vegetable layer.
05 - Top with remaining mozzarella to help bind the fillings together.
06 - Cover each sandwich with a second bread slice, buttered side facing out. Press gently to secure.
07 - Heat a skillet or griddle over medium heat. Place sandwiches on the hot surface and cook for 2–3 minutes per side, pressing gently with a spatula, until bread is golden brown and cheese fully melts.
