White Bean Tuna Toasts (Print Version)

# Ingredients:

→ Protein

01 - 1 can (5-ounce) albacore tuna in water or oil, drained well
02 - 1 cup white beans, rinsed and drained if using canned

→ Aromatics

03 - 1 clove garlic, minced
04 - 2 tablespoons thinly sliced red onion
05 - 2 tablespoons minced fresh rosemary

→ Citrus

06 - Zest of 1 lemon
07 - 2 tablespoons fresh lemon juice

→ Oils & Seasonings

08 - ½ cup extra virgin olive oil
09 - ½ teaspoon kosher salt
10 - ½ teaspoon freshly ground black pepper

→ Base

11 - 4 slices sourdough bread

# Instructions:

01 - In a medium bowl, combine the drained tuna with beans, olive oil, minced garlic, lemon zest, lemon juice, red onion, fresh rosemary, salt, and pepper. Mix thoroughly and allow to rest for at least 10 minutes (or overnight refrigerated) for flavors to develop.
02 - Toast the sourdough bread slices until golden brown.
03 - Divide the tuna mixture evenly among the toasted bread slices. Adjust seasoning with additional salt and pepper if desired.
