Mashed Sweet Potatoes (Print Version)

# Ingredients:

01 - 3 pounds sweet potatoes (about 5 large or 6 medium), peeled and cut into 1-inch cubes
02 - 4 tablespoons unsalted butter, cut into pats, plus more for serving
03 - ½ cup milk, warmed
04 - ¼ cup maple syrup
05 - 1 teaspoon sea salt, plus more for cooking the potatoes
06 - Freshly ground black pepper
07 - Fresh thyme leaves, for garnish (optional)

# Instructions:

01 - Place the sweet potatoes in a large pot and cover with cold water by 1 inch. Stir 1 tablespoon salt into the water.
02 - Bring to a boil over high heat, then reduce the heat to maintain a gentle boil. Cook for 10 to 15 minutes, or until the potatoes are easily pierced with a fork.
03 - Drain the potatoes and return to the pot. Add the butter, milk, maple syrup, salt, and several grinds of pepper.
04 - Use a potato masher to mash until smooth and well combined.
05 - Season to taste and serve topped with more butter and fresh thyme leaves, if desired.

# Notes:

01 - For a smoother texture, you can use an electric mixer instead of a potato masher.
02 - These mashed sweet potatoes can be made up to 3 days ahead and reheated in the oven or microwave.
