Mix together the dried basil, garlic powder, onion powder, dried thyme, red pepper flakes, salt, and black pepper in a small bowl until well combined.

Take half of your seasoning mixture and generously rub it all over both sides of the salmon fillets.

Heat olive oil in a large skillet over medium-high heat. Once hot, place the seasoned salmon flesh-side down first and sear for about 5 minutes on each side until golden. Remove from the pan and set aside.

In the same skillet, reduce heat to low and add minced garlic and chopped sun-dried tomatoes. For extra flavor, you can add a splash of the sun-dried tomato oil. Sauté for 1-2 minutes until fragrant.

Pour in the chicken stock and use a wooden spoon to scrape up any flavorful brown bits from the bottom of the pan. Add the heavy cream, parmesan cheese, and the remaining seasoning mix. Stir until well combined.

Increase heat to medium-low and let the sauce simmer for 10-15 minutes until it thickens to your desired consistency. Taste and adjust seasoning with extra salt and pepper if needed.

Return the salmon to the skillet and spoon the sauce over the fillets. Cook for 3-5 minutes more (3 minutes for medium, 5 minutes for well done). Garnish with fresh basil leaves before serving.
