Maroulosalata Romaine Dill Feta (Print Version)

Crisp romaine, dill and feta tossed in a lemon olive oil vinaigrette for refreshing Mediterranean flavor.

# Ingredients:

→ Salad Base

01 - 2 hearts romaine lettuce, thinly sliced
02 - 4 to 5 scallions, finely diced
03 - 1 bunch fresh dill, chopped

→ Cheese

04 - 4 ounces feta cheese, crumbled

→ Dressing

05 - 1/2 cup extra-virgin olive oil
06 - Juice of 1 large lemon
07 - 1/4 teaspoon salt

# Instructions:

01 - Rinse romaine lettuce thoroughly and slice thinly. Use a salad spinner to dry the lettuce completely.
02 - In a mixing bowl, vigorously whisk the olive oil, lemon juice, and salt until the emulsion is smooth and slightly thickened.
03 - In a large salad bowl, add the sliced romaine, diced scallions, chopped dill, and crumbled feta cheese.
04 - Pour the prepared dressing over the salad ingredients. Toss thoroughly, massaging the greens gently with your hands to allow the flavors to permeate and slightly tenderize the leaves.
