In a large skillet over medium heat, cook chopped bacon until crispy. Remove bacon from skillet and reserve on a plate, leaving drippings in the skillet.

Pat pork chops dry and season both sides generously with salt and ground black pepper. Add olive oil to the skillet if needed, then sear pork chops for 4 to 5 minutes per side until golden brown.

Arrange seared pork chops in a single layer in a baking dish. Distribute crispy bacon evenly over the chops.

In a small bowl, whisk together maple syrup, Dijon mustard, heavy cream, garlic powder, and thyme. Pour the sauce evenly over pork chops.

Place baking dish in preheated oven and bake for 20 to 25 minutes, until pork chops reach an internal temperature of 145°F (63°C).

Remove from oven and let pork chops rest for 5 minutes. Garnish with chopped fresh parsley before serving.
