Crispy maple-glazed bacon and melty cheddar unite on buttery sourdough for a bold, savory-sweet sandwich.

# Ingredients:

→ Bread and Cheeses

01 - 8 slices thick-cut sourdough bread
02 - 4 ounces sharp cheddar cheese, grated
03 - 2 ounces smoked applewood cheese, grated
04 - 2 ounces mozzarella cheese, grated

→ Proteins and Flavorings

05 - 6 slices thick-cut applewood-smoked bacon
06 - 3 tablespoons pure maple syrup
07 - 4 tablespoons butter, high-quality
08 - 1/2 teaspoon sea salt
09 - 1/4 teaspoon black pepper
10 - 1 teaspoon dijon mustard (optional)

# Steps:

01 - Preheat a skillet over medium heat or set air fryer to 370°F.
02 - Cook bacon slices until crisp, brushing each side with maple syrup during the last 2 minutes of cooking.
03 - Grate all cheeses and thoroughly combine in a mixing bowl.
04 - Spread butter generously on one side of each bread slice.
05 - Layer cheese mixture and maple-glazed bacon between two bread slices, ensuring the buttered surfaces face outward. Season with sea salt, black pepper, and a touch of dijon mustard if desired.
06 - Place assembled sandwiches in skillet. Cook for 3 to 4 minutes per side until the bread is golden brown and the cheese has melted. For air fryer, cook at 370°F for 3 to 4 minutes, flipping halfway through.
07 - Allow sandwiches to rest for 2 minutes before slicing and serving.

# Notes:

01 - For extra crispiness, press sandwiches gently with a spatula while toasting.
