Low Carb Broccoli Salad (Print Version)

Broccoli and cauliflower with bacon, cheese, and creamy yogurt dressing make a flavorful side dish.

# Ingredients:

→ Dressing

01 - 3/4 cup plain Greek yogurt
02 - 1/2 cup mayonnaise
03 - 1/2 cup clover honey
04 - 2 tablespoons red wine vinegar
05 - 1 tablespoon granulated sugar
06 - 1/2 teaspoon salt
07 - 1/2 teaspoon black pepper

→ Salad

08 - 4 cups broccoli florets, chopped
09 - 4 cups cauliflower florets, chopped
10 - 12 slices bacon, cooked and crumbled
11 - 8 ounces Colby Jack cheese, cut into small cubes
12 - 1 red onion, peeled and chopped

# Steps:

01 - In a medium mixing bowl, whisk together Greek yogurt, mayonnaise, honey, red wine vinegar, granulated sugar, salt, and black pepper until smooth. Cover and refrigerate.
02 - In a large mixing bowl, add chopped broccoli florets, chopped cauliflower florets, half of the crumbled bacon, Colby Jack cheese cubes, and chopped red onion.
03 - Pour the prepared dressing over the broccoli mixture and toss thoroughly until evenly coated.
04 - Top with the remaining bacon and serve immediately.
