In a large glass mixing bowl, whisk together the coconut milk, coconut milk yogurt, and cane sugar until the sugar is fully dissolved.

Add the lime zest and fresh lime juice to the mixture. Whisk thoroughly. Adjust lime flavor to taste, if desired.

Add two drops of natural green food coloring, if using, and whisk until color is evenly distributed.

Pour the mixture into a measuring cup with a spout, then distribute evenly among popsicle molds, filling each to the top.

Insert popsicle sticks into molds. Freeze for a minimum of 2 hours, or until completely set.

To serve, run the molds briefly under warm water to loosen, then carefully remove popsicles.
